Lancastrian Dark Ale

Continuing my obsession with wheat using a style that rarely hits the mark for me, but wanted to use some midnight wheat and well, ‘wheat!’.  I also wanted to get to know Green Bullet hops, so those are used exclusively in the boil, hopstand and partially in the dry-hopping along with Motueka.

Grain Bill:

7.0 lbs 2-Row Pale

Glass of Moeder F*cker 45.0 lbs Wheat

1.0 lbs Midnight wheat (500L)

.25 lbs Caraviene

Handful of Black Patent for some bitter edge

Mash water volume: 8.0 gal

Mash Temp: 152 for 75 min

Mash out:  170 for 10 min

Boil volume 7.25 gal

Hop schedule:

60 min: 2.0 oz Green Bullet 11% AA

15 min: 1.0 oz Green Bullet  11% AA

Hopstand:  3.0 oz Green Bullet 11% AA

Dry-hop in primary 6 days:  1.0 oz Green Bullet and 1.0 oz Motueka

Dry-hop in secondary, 7 days:  1.0 oz Green Bullet and 1.0 oz Motueka

Yeast:  WL001 California Ale with a 1 day starter

O.G. 1.065

Fermentation temp: 70

Initial remarks as carbing starts:  Nose shows the roasted malts and the lime qualities of the Moetuka hops.  Body is nicely bitter with decent balance between the roasted malts and spice qualities of Green Bullet.
