Sour Pale Wheat

Very Little Sumpin’ Sumpin’ Wild went head to head on Easter Sunday with the real thing and fared much better than expected.  Will update tasting notes there.  Also had a chance to try some pretty great beers including Alchemist’s “Heady Topper” (Thanks @baggatsbeerclub!) and Cascade’s “Kriek 2009“.  Next experiment is a sour IPA and phase one is to brew a half gallon that will be aged then blended with fresh whenever it tells me it’s ready.  Recipe is roughly using the base of the Sumpin’ Sumpin’.

Grain, Grind, BitterRecipe:

Grain Bill:

1.0 lbs – Pale Malt

5.0 oz – Torrified Wheat

2.0 oz – Cara Wheat

.5 cup – Light DME (wasn’t getting the OG I wanted, more on that later)

Target Volume 3.5 qts (boil, trub loss).

Mash Temp: 154 for 70 min

Mash water volume: 2.5 qts

Sparge water volume: 2.5 qts

Hop schedule:

90 min: 5.0g Citra 15.6% AA

60 min: 3.0g Pearle 9.2% AA

30 min: 2.5g Pearle 9.2% AA

15 min: 1 tsp Irish Moss

10 min: 2.5g Pearle 9.2% AA

Yeast: 1/5 vial White Labs WLP500 Trappist, 1/25 pack Safale 05

O.G. 1.062

Notes:  Milled the grains all at once (pictured) and the torrified wheat and cara wheat went largely uncrushed due to the roller gap.  They broke down a bit in the mash to provide some starches, but the DME was added as a safety move to keep the OG up.  Not sure if/how that will play out in the final product.  Future, will likely mill them separately either by narrowing the roller gap or using a coffee grinder.
