Sour Cherry Stout

We arrived in Lancaster at the start of summer 2011.  As we drove around the county in search of noSour Cherriesthing, we uncovered a trove of sour cherries.  They come and go very quickly and we stored a few pounds in the freezer.  Time to break them out.


Grain Bill:

2.0 lbs. Pale Malt

1.0 lbs. Marris Otter

4.0 oz Roasted Barley

4.0 oz Chocolate Malt

2.0 oz Acidulated Malt

Hop/Addition Schedule:

60 min: 20 grams Pearle 9% AA

15 min: 10 grams Pearle 9% AA (increase the heat at this point, when the cherries are added, the temperature drop will be significant).

10 min:  1.0 lbs. macerated sour cherries (frozen and crushed)

Yeast: White Labs Edinburgh
